CELEBRITY CHEF: "Coconut Boiled Yam With Avocado Purée With Fried Egg And Shrimps" By IYABO LAWANI!!!



Yam, 4 slices cut in halves 
Coconut milk 2 cup 
Water 2 cups
Chicken seasonings to taste

Method:
Cook Yam in a clean pot till soft and it absorbs all the coconut milk but not burnt.
Keep hot till needed.



2 Avocado Pear stoned and scoop out into a bowl
1/ 2 lemon juice
1/2 tsp  Dry Peppers 

Method:
Mash avocado with a fork or blend on pulse mode a few times .add the rest of the ingredients, blend a few more times and set aside.



1 Onions chopped
4 large Tomatoes chopped 
2 chili peppers chopped
2 garlic cloves crushed
1 stalk spring onions chopped
2 cups of Dressed Prawns
2 tbsp veg oil
Seasoning/ salt to taste
4 sunny side up Eggs. 



Method:
Heat oil on high heat, add garlic onions stir for 1 minute.
Add the shrimps cook for 3 minutes to avoid the shrimps becoming rubbery and add tomatoes, season and fry for 2 minutes.
Add the spring onions stir well and turn off the heat.
Serve Yam, avocado purée, eggs and shrimp sauce beautifully on a platter.
