"Red Ginger Fish Stew" On Plain Rice By Multi-Talented Iyabo Lawani!!


4 Red Chillies
2 Red Ginger roots med. size.
1 large Onions
2 stalk Spring Onions
4 garlic cloves
Seasoning/ salt to taste
Soya oil 2 cooking spoon
4 pieces Pan Seared ( shallow fried) fish of your choice.
1/2 lemon juice

- Scrape ginger with the back of a spoon wash and blend smooth in a blender
-Add the washed chillies, onions, spring onions, curry leaves and use pulse mode to blend a few times to have a coarse texture and set aside.

- Heat oil in a saucepan, fry finely chopped garlic with a few onion slices for 2 mins
- Now add the blended pepper, seasoning and fry for 6 minutes not too dry.( you don't want a very dry sauce)
- Add the fish and cook for a few more minutes, give the pot a shake, taste for salt.
- Serve well garnished with plain boiled rice on the side.
